From the renowned Yirgacheffe region, this Swiss Water decaf showcases the distinctive character of Ethiopia's heirloom varietals. Cultivated by 800 smallholder farmers at elevations of 1,800–2,000 meters, the ripe cherries undergo meticulous processing: careful sorting, 36–48 hour fermentation, thorough washing, and sun-drying on raised African beds with protective measures during peak heat and nighttime hours. After transport to Addis Ababa for dry milling, grading, and hand-sorting, the green beans are treated using the Swiss Water Process—a certified organic, chemical-free method employing pure green coffee extract and proprietary carbon filtration calibrated to remove caffeine molecules exclusively. The result delivers the signature Yirgacheffe profile: vibrant citric acidity balanced with sweet chocolate undertones and delicate floral and herbal notes of lavender, jasmine, bergamot, and thyme—all without compromise.
